Most of our meals lately start out this way. Little sweet peppers and onions...yum! We've been trying to cut way back on the amount of meat we eat and it's proving to be a little difficult for the kids and I. The kids are terrible eaters anyway, so I guess dinner time is about the same as always for them. I'm getting over the feeling that meat has to be a part of every meal but figuring out what's for dinner (which was always a challenge) is harder. I'm following an online menu but, I don't know, it just feels so foreign. I'm sure I'll get used to it if I just give it time.
